ALFN Local Food Club: The Market is Open and Congrats to the Root!
Howdy Food Club,
The market is open and ready for your orders of delicious local food! One of my favorite parts about volunteering at Food Club is getting to see all of the incredible products you order first-hand. Just yesterday I was especially inspired by (and jealous of) those of you that ordered…
- Banana nut bread from Bluebird Hill Berry Farm. Sure, I could try to bake my own at home, but this one tastes so good, what’s the point? I hear it’s the pineapple that really takes this bread to a level of ultra-dense deliciousness.
- I’d take a good pork chop over just about anything, any time, any where…you get the picture. Get ‘em smoked or not from Falling Sky or Crescent Creek farms’ happy hogs. I’ll be trying mine with this skillet-to-oven technique.
- I’ll be honest, besides the occasional smoothie, I wouldn’t know what to do with the bounty of frozen fruit we’ve got on the market. Luckily, my partner Marisa substituted local pecans and honey into this blueberry and raspberry baked oatmeal recipe and let me tell you, I’ve never been so excited to eat oatmeal!
- After weeks of jealousy from handing it to others, I finally ordered my own Geek Eats cilantro almond pesto, and I’ve already put it on just about everything I’ve eaten since yesterday. It is definitely one of the most delicious things on the planet, and I’ve certainly had my share of delicious things.
- I love pickled things. Period. There’s just something about that vinegary-sweetness that makes it hard for me to put a jar down. Thankfully The Root Cafe preserves our local produce in the most delicious way possible with their green tomato, honey pilsner, and jalapeno pickles.
Speaking of The Root, check out why they’re having the best year ever. They recently received a $150,000 grant from JPMorgan Chase Bank, which they’ll use to expand operations and start offering dinner later this year! The Root is truly fulfilling their mission of building community through local food, so when they win, we all win. Congrats to all of us, but especially to the Root for all the well-deserved awards!

The Market is back open this morning. The Super Bowl is next Sunday so be sure to stock up on items to accompany your parties. Desserts and cakes from Flying S Farms, Healthy Harvest Breads, Ms. Rosies and Ridiculous Chocolate are available. You will also find a party pack of empanadas from Casa Segovia-Paz.
We welcome back The Blue Porch, returning with their cold salads, cheese spreads and hot sauces.

All these need to stay inside until our frost-free date near the end of April, then will be happy to spend the summer on porch or patio.

The recipe this week came to me in one of the emails I get about food and uses products you can find on the Market It comes to us from Little Leopard Book. I plan on trying it this week.
Ingredients
- 1 large onion (sliced)
- 4 garlic cloves
- 2 tbsp fresh rosemary (chopped)
- 2 lb beef chuck roast
- 1 tsp kosher salt
- 1 tsp black pepper
- 2 cups beef broth
- ¼ cup red wine
- 1 can (6 oz) tomato paste
- 1 can (15 oz) diced tomatoes
- 12 ounces pappardelle pasta or polenta
- ½ cup Parmesan cheese (grated)
Instructions
- Add the onion and garlic cloves to the bottom of a slow cooker set to high.
- Sprinkle the fresh rosemary over the top.
- Season the beef with the salt and pepper, then add to the slow cooker.
- In a medium bowl, combine the beef broth, red wine and tomato paste.
- Pour the mixture over the beef.
- Add the can of diced tomatoes to the crock pot.
- Cook on high for 68 hours.
- Reach a fork into the crock pot and the beef pulls right apart.
- Serve it on top of creamy polenta or tossed with papparadelle pasta.
- Use a ladle to pour the sauce from the crock pot over the beef and polenta or pasta.
- Top with fresh grated parmesan cheese.

The VI Locally Grown market is now open for orders. Since so many of you have been requesting more eggs, we will have more eggs from now but there is clearly a huge demand so come early! Thanks for supporting your local farmers and craft makers.
The new location for the market is a beautiful experience within itself. If you haven’t had a chance to see the Lawaetz Museum property at Little La Grange on Mahogany road, the market is a great opportunity to support your local farmers and enjoy the a local heritage site for St. Croix.

This year-round online farmers’ market offers several types of winter vegetables, as well as other foods and herbal products produced on local farms. Support your friends and neighbors who have grown and produced these items.

Recipes
SLOW-ROASTED, BACON-WRAPPED RABBIT (serves 4-6)
INGREDIENTS:
One rabbit from Three Oaks Rabbitry
Five slices of bacon
Vegetables in large chunks (this is usually whatever I choose to have as a side dish – sweet potatoes, or apples and onions, carrots, turnips etc.)
A splash of olive oil (if needed)
Salt and pepper
A splash of cider or white wine (optional)
DIRECTIONS:
Rinse the rabbit and pat dry. Sprinkle the rabbit with salt and pepper. Place a splash of olive oil in a roasting pan with a lid and add the rabbit on top. Once in the roasting pan, drape the rabbit with the bacon. With the pan open, roast the rabbit for 15 minutes at 400 degrees.
After 15 minutes, add the vegetables and a splash of wine or cider (plus any olive oil for the vegetables) place the lid on the roasting pan, and turn the oven temperature to 200 degrees. Cook until the rabbit is done (160 degrees on a meat thermometer) and the vegetables are tender – this usually takes 2 or 3 hours.
I generally place the rabbit in the oven after lunch and take it out for dinner. If this is your first time slow roasting meat, just check on it once in a while to make sure that the meat is staying moist – most likely you’ll have an abundance of good juices from the meat, bacon, and vegetables. To serve the rabbit, I generally cut it into 6 pieces, the two back legs, I split the back down the middle, and also serve the two ribs and front legs together. Alternately, rabbit is fairly easy to pull from the bones when cooked this way.

Jess Wilson of In Town Organics and Summer Fields sends the following message: I want to point out something very exciting that happened in 2014 – that was the opening of Three Oaks Rabbitry on Gudger Rd. in Sewanee. I have raised rabbits for our family and a few lucky others for the past ten years. These rabbits live in large cages that are moved daily to allow access to fresh grass and plenty of hopping room and sunshine when desired. My rabbits are fed oats and locally grown alfalfa hay. I could not sell these rabbits legally in the past because there was not a processing facility in the area. Erich Eichler was willing to do the work (and waiting) needed to change this. Last year his processing facility was inspected by the USDA and FDA for processing rabbits for legal sale in our area! I’m so excited to finally have a legal outlet for selling my rabbits. Three Oaks Rabbitry sells my rabbits as well as rabbits that Erich raises himself and you can purchase them on the market! Domestic rabbit is an incredibly lean, white meat that can be substituted for chicken in many recipes. Farm to Table Recipes
Chili
1 to 2 tablespoons oil
1 pound sirloin, cubed, grass fed, grass finished
1 pound ground meat, grass fed, grass finished
1 large onion, finely chopped
1 Bottle of beer
1 14.5 ounce can diced tomatoes
1 cup coffee (strong is best)
1 tablespoon tomato paste
1 tablespoon chili sauce
1 tablespoon cocoa powder
1/2 finely chopped chili of choice
1/4 cup brown sugar
1 tablespoon heaping of cumin
1 teaspoon heaping of coriander
1 teaspoon cayenne pepper
1 teaspoon salt
2 15 ounce cans kidney beans
1 15 ounce cans white beans
5 large carrots, chopped into discs (OPTIONAL)
In large stock pot or dutch oven, heat oil over med. flame and brown meat, sirloin chunks first then ground. When meat is lightly browned, throw on the onions. Take two large sips from the beer. Add remaining beer plus, tomatoes, coffee and tomato paste. Add sugar, spices and kidney beans. Reduce flame to low and let simmer for an hour. Add white beans and carrots simmer for another hour or two; longer will be better. Season as needed.
